Humming to the tune of: —-
2.2 lbs liempo (pork belly, skin on) 2 bay leaves 175 cc vinegar 1 tbsp salted bean curd, mashed 60 cc soy sauce 1 tsp freshly ground black pepper 75 g raw peanuts, shelled 35 g brown sugar
t1 tbsp minced garlic
Parboil whole pork belly in about a liter of water for 10 minutes, then cut into 5 equal portions. Reserve broth.
With a sharp knife, carefully score skin side of each portion making criss-cross slits, approximately 1 cm apart and 0.5 cm deep, then place in a bowl with all the remaining ingredients and marinate in the refrigerator overnight.
The next morning, bring the reserved broth to boil, add pork with remaining ingredients, and cook for 1 1/2 hours, until meat is tender.

How to Prepare:
This a mix and taste recipe so no need for measuring cups or spoons. Cut bork into med size and place it in a pot. Cover with water with the bay leaf and peppercorn. Bring it to a boil till meat and fat is very soft. Good idea to boil it for at least an hour. Add the rest of ingredients and continue to boil till the sauce thickens. Serve with rice!!!!

1 In a medium pot, saute garlic in oil until brown. Add pork and cook until brown. Combine water, soy sauce, vinegar, brown sugar, salt, oregano, bay leaf and black beans and add to pork. Cook over low heat until pork is tender. Serve hot.
H U M B A (Stewed Sweet-Sour Pork with
Fermented Black Beans)
Ingredients: 1 k Pork, cut into 2-inch cubes 2 tsp Garlic, minced 1 c Water 2 tbsp Soy sauce 1/4 c Brown sugar 1 tsp Salt 1/2 c Vinegar 1 pc Bay leaf
1 tbsp Fermented black beans
1. Combine pork and all other ingredients in a saucepan.
2. Let boil, and then lower flame to simmering. Cook for about an hour or
until pork is tender.
3. Add more water if more sauce is desired.
Humba Pork Braised with Sugar # 1

1 kg. pork (tenderloin) 1 cup water 1/2 cup soy sauce 1/2 cup vinegar 4 tbsps. brown sugar 2 cloves garlic, crushed 3 leaves oregano 2 tbsps. peppercorns, pounded 8 pcs. laurel leaves, pounded 10 pcs. dried banana flower 3 tbsps. salted black beans 1/2 cup fried peanuts
salt to taste
1. Slice pork into desired sizes. 2. Mix all the ingredients. 3. Cook in low fire until tender.
4. Remove from the stove then serve.
